Great meals from a pack of SAUSAGES.

FIVE IDEAS FOR GREAT MEALS TO MAKE WITH A PACK OF SAUSAGES!
NB (I always grill my sausages first before adding them to the recipes – that way I know they are properly cooked!)
1. Sausage Sizzle - Tray bake with sliced red onions, peppers, thinly sliced potatoes, broccoli, ½ tsp of both cumin, coriander and ¼ tsp. chilli. Cook approx. 40 mins at 200 degrees. Turning if needed. Add sliced cooked sausage in last 10 mins of cooking time. Serve.
2. Sausage Ministrone Soup - Make minestrone soup from sliced inions, carrots, green beans, pepper, mushrooms – whatever you have and handful of small pasta and sliced sausages in last 10 mins. of cooking.
3. Sausage, Prune, Lentil and Leek Stew- This is wonderful and easy. Slice 2 leeks and fry with chopped garlic. Add about 12 prunes and a cupful of green lentils with sliced sausages. Add 1 pint stock, season and cook for approx.. 45 mins. till lentils are cooked.
4. Sausages with Cabbage/Leek Potato and Caramelised Onion Gravy Cook peeled potatoes and leave to cool. Chop leeks and fry gently. Chop cabbage and cook for 4-5 mins in minimal water then drain. Mix leeks and cabbage with potato and season. Put in oven with cooked sausages to keep hot. Fry two sliced red onions for approx.. 5 mins then add 1 tbs soft dark brown sugar and fry a few mins. more Add little water, stock (or red wine), season and 1 tbs flour and cook to approx.. 15 mins – add more water if needed to get right consistency.. Pour over your leek/Cabbage potatoes to eat with sausages.
5. Sausage Cassoulet – Fry 2 small onions with 3 cloves garlic and add, chopped carrots, potatoes, sundried tomatoes or tinned tomatoes/tomato puree, peeled potatoes cut into chunks and tin of white or barlotti beans with sliced sausages. Season with herbs, salt & pepper and tomato puree if you have some. Add stock approx.. ½ pt and cook for approx.. 40 mins until everything ready.
